There's enough sauce in this recipe for four large pizza bases.


1 400g tin of chopped tomatoes

4 cloves of garlic - finely chopped

1.5 - 2 teaspoons of dried mixed Italian herbs

1 tablespoon of balsamic vinegar

1 tablespoon of olive oil

2 tablespoons of tomato puree

squeeze of lemon juice

Salt and pepper to taste

1. Mix the ingredients in a bowl and set aside ready for the pizza bases.  No cooking is required.

The Italian herbs will usually include oregano, marjoram, thyme, parsley, sage and basil.
If you don't have a ready mix then any, all or none of these to suit your taste can be used instead.

The total amount of all dried herbs used should be around 1.5 - 2 teaspoons to suit your taste.
